AP Studios / G Magazine: A Grape SXSW


This week’s featured chef/owner is Tyson Cole of Uchiko in Austin Texas. The shoot was scheduled only the week before by our Grape Commission client Jim Howard and happily it coincided with Austin’s party weekend – SXSW.  As most everyone would think this would be an insane time to do a photo shoot, but Jim and Scott did it anyway.  With the hustle and bustle outside, the mood inside Uchiko was calm and serene. Chef Cole was in the zone, with his mise en place he created the dish on the spot – no recipe – just an idea to coax the most out of the grapes tuning into both the savory and the sweet essence with an applewood smoked peeled grape – a Willy Wonka charmed creation of the perfect balance of sweet and savory.  Scott is still in disbelief of tasting a whole meal of flavors in one single grape…
