Leeks may be related to onions and garlic, but they are in a league all their own. A bit pricey to buy, but easy to grow–this veggie is the perfect garden to table food that you can dig up and throw in a stir fry or stew in no time. One of our favorite leeks recipes–pan-roasted chicken with leek butter sauce–comes from our recent Darigold minis. The earthy sweetness of the leeks and the brightness of the thyme brings out the best in the chicken breast. Pan-roasted Chicken with Leek Butter Sauce

3 leeks 3 pounds skin-on, bone-in chicken thighs
salt and ground black pepper to taste
1 tablespoon vegetable oil
1/2 cup (1 stick) Darigold butter
1 teaspoon fresh thyme leaves

Preheat oven to 475°F. Quarter leeks lengthwise and rinse to remove debris. Cut into 2-inch pieces, discard dark green tops, and set aside. Season chicken with salt and pepper. Heat oil in a large ovenproof skillet over medium-high heat until hot but not smoking. Add chicken skin-side-down and cook 2 minutes. Reduce heat to medium and keep cooking chicken until skin is nicely browned (about 10 more minutes). Turn chicken skin-sode-up and transfer skillet to the oven. Roast 10 minutes, or until chicken is 160°F on an instant-read thermometer. Transfer to a plate and keep warm. Meanwhile, melt the butter in a separate pan over medium-high heat. Add the leeks, thyme, salt, pepper and one-half cup water and bring to a simmer. Cover and cook until leeks are very tender (about 15 minutes). Arrange leeks on a serving platter and top with chicken. Makes 4-6 servings.
