It’s National Apple Month and we couldn’t let October pass you by without an easy recipe that you’ll love: gouda and gruyere grilled cheese with crisp apples and bacon. This modern take on a classic is an easy, comforting and filling meal that’s sure to satisfy your senses on a chilly day. The crunchy apples and salty bacon with the combination of complex cheeses on perfectly toasty focaccia bread is unforgettable. You may never go back to plain ol’ grilled cheese again…

Gouda and Gruyere Grilled Cheese with Apples and Bacon

  • Smoked gouda cheese
  • Gruyere cheese
  • Apples, cored and very thinly sliced
  • Focaccia bread
  • 3 strips of bacon, cooked and cut in half
  • Butter


Preheat grill pan over medium heat.

Butter one side of each slice of bread.  Arrange half of the cheese slices on the unbuttered side of one slice of bread.  Layer the bacon, sliced apples, and the other half of the cheese carefully on top.  Add the other slice of bread and transfer to the grill pan.

Cook sandwich on both sides until golden brown and the cheese has begun to melt, about 2-3 minutes per side.
