Our Little Book Company / Pause for Pork: Bacon Cheddar Biscuits


Here is another great recipe for Better Breakfast Month–as long as you don’t think of “better” as healthier. To us “better” means damn delicious, hearty, and more bacon, please.

Bacon Cheddar Biscuits

Makes 6 biscuits

2 cups all-purpose flour
2 teaspoons sugar
2 teaspoons baking powder
½ teaspoon salt
1 ½ cups heavy cream
½ cup grated Cheddar cheese
4 strips of bacon, cooked and crumbled (to equal ½ cup)

Preheat oven to 425°F. Line a baking sheet with parchment paper or silicone baking sheet. In a large bowl whisk together flour, sugar, baking powder, and salt. Toss in cheese and mix until coated with flour mixture. Stir in cream and bacon, stirring for about 30 seconds. Do not over mix.

Turn dough onto a lightly floured surface and knead for about 30 seconds. Pat dough into a 1-inch thickness. Cut dough into 3-inch rounds with a biscuit cutter or into 3-inch squares and place on the baking sheet 2-inches apart. Bake for 15-18 minutes until golden brown.
