Bacon Wrapped Stuffed Dates

Makes 20

20 pitted Medjool dates
½ cup crumbled blue cheese
10 slices regular smoked bacon, cut in half crosswise (making 20 smaller slices)
½ cup balsamic vinegar
1 orange, zested and juiced

Preheat oven to 450°F.

With a paring knife make a small incision lengthwise down the center third of each date making sure to cut through only one side. Gently stuff each date with 1 teaspoon of blue cheese. Take one bacon piece and wrap around circumference of the date, secure the overlapping seam with a toothpick. Place on a parchment lined baking sheet and bake for 7-9 minutes. Turn and bake for an additional 7-9 minutes or until bacon is crisp and cheese begins to ooze.

While dates bake, stir vinegar, orange zest, and juice in a small saucepan and bring to a boil over high heat. Reduce heat to medium-low and simmer until reduced by half and mixture is a thick, syrupy consistency, about 12-15 minutes. Strain sauce through a fine mesh strainer.

Arrange dates on a serving platter and drizzle with glaze.
