This is the season for fresh food that can be prepped easily and tastes great.   These specially tested recipes will satisfy your taste buds and keep you energized during these long summer days.

This week we are featuring crunchy pickled carrots, asparagus and farro salad and a refreshing salmon dish. Enjoy!

Carrot Pickles

Serves 4

4 large carrots, cut into sticks

1/2 cup distilled white vinegar

1/4 cup water

4 teaspoons sugar

1/4 cup thinly sliced shallot

2 sprigs dill Salt Pinch cayenne

Cook the carrots in boiling salted water for 1 minute. Drain and transfer to a bowl. Stir in the remaining ingredients. Let cool and refrigerate overnight.

Asparagus and Farro Salad

Serves 4

11/2 cups farro 8 ounces asparagus, trimmed and cut into 1-inch pieces

1 pint cherry tomatoes, halved

1/2 cup chopped red onion

1/4 cup chopped parsley

1/4 cup chopped dill

1/3 cup extra-virgin olive oil

1/4 cup sherry wine vinegar

1/2 cup crumbled ricotta salata or feta

Salt and freshly ground black pepper

Cook farro in large saucepan of boiling salted water until tender, about 45 minutes. Add the asparagus and cook 2 minutes longer. Drain and transfer to a large bowl. Stir in the remaining ingredients, season with salt and pepper and serve.

Grilled Salmon with Cucumber Ginger Salmon Salad

Serves 4

2 English cucumbers, very thinly sliced

1 cup very thinly sliced red onion

Salt and pepper

3 tablespoons chopped pickled ginger

1 tablespoon unseasoned rice vinegar

2 tablespoons canola oil

4 salmon fillets

Preheat the grill to high. Oil the grill rack. In a large bowl, combine the cucumbers, onion and a liberal amount of salt. Let stand for 15 minutes. Stir in the ginger, vinegar and 1 tablespoon of the oil. Set aside. Brush the fish with the remaining oil and sprinkle with salt and pepper. Grill the fish, skin side up, turning after about 5 minutes, grilling about 8 to 10 minutes total. Serve with the cucumber salad.
