Simple, elegant and so easy to prepare, our Maple Roast Acorn Squash recipe from the Nordstrom Family and Friends Cookbook is a perfect addition to any Fall meal.  Serve straight from the oven or with a little bit of heavy cream.

Maple Roast Acorn Squash

{Serves 4}

2 medium acorn squashes

Kosher salt

Freshly ground black pepper

Freshly grated nutmeg

4 tablespoons (1/2 stick) unsalted butter

1 1/2 cups pure maple syrup

Preheat the oven to 400 degrees F.  Cut the squashes halves lengthwise.  Scoop out and discard the seeds and strings.  Cut a thin slice off the bottom so that the halves sit level.  Place the halves on a rimmed baking sheet and sprinkle each with a little salt and pepper.  Grate a generous amount of nutmeg into each half.  Place 1 tablespoon of the butter in each cavity.  Fill each, almost to the top, with the maple syrup.

Roast squashes until the flesh is very tender when pierced with a knife, about 1 hour.  Serve immediately.
